Cinnamon Roasted Plantains
I’m sure that it comes as no big surprise to you that I have a bit of a sweet tooth. Actually, I have a HUGE sweet tooth. And, these Cinnamon Roasted Plantains are just the thing to tame my craving for a little something sweet without totally losing my healthy eating cool points.
These plantains may look a bit gnarly, but they are perfect for this dish. For the sweetest plantains, I’ve found that they are best when firm and flecked with black.
If you’ve never cooked plantains, you are in for a healthy treat.Though nutritionally very similar to a potato calorie-wise, plantains are a rich source of fiber, vitamins A, C, and B-6, and the minerals magnesium and potassium.
Easily digestible, plantains are rich sources of complex carbohydrates, vitamins and minerals and contain about 32 percent of the recommended daily amount of vitamin C in a single cup. Its believed that vitamin C acts as an antioxidant and helps build up the immune system.
But, the plantains are only one ingredient in this healthy dessert powerhouse. This recipe also includes a generous addition of cinnamon which also has a number of proven health benefits. Cinnamon can even be used to sweeten recipes without added sugar.

Ingredients
- 4 Ripe Plantains
- 1 TB Cinnamon, ground
- 1 1/2 tsp Smoked Paprika
- 1/2 tsp Sea Salt
- 2 TB Coconut Oil, melted (optional)
Instructions
- Preheat oven to 425 degrees F.
- Slice plantains and place in a large bowl
- Sprinkle plantains with Cinnamon, Smoked Paprika, Sea Salt and Melted Coconut Oil (if using)
- Gently toss plantains, spices and oil to coat
- Place plantains in a single layer on a parchment lined baking sheet
- Roast for 25 minutes until nicely browned. Plantains should be turned once, after the first 15 minutes of roasting.
