Hi! My name is Benita and I want to personally thank you for visiting us here AtMemesTable.com. Pull up a chair and join me for a nice cup of tea!I live in beautiful North Carolina, with my husband, teenage son and our dog who we affectionately call, “Princess Joshua”. I love spending time with my family and working in my community and my church. A passionate cook and “squarefoot” gardener, I believe that we should enjoy life….always giving thanks for all that God has provided us.
Our three blessings! Morgan Brandon and Jordan (and of course, “Princess Joshua”) It was a great day, with great memories!
Our family has weathered some storms in the past few years (maybe we’ll talk more about that later), but we are still standing! One of the lessons that I learned from my Mom (who was affectionately called Meme by her grandchildren) is that sometimes life is hard, but you do the best you can and never, ever give up or give in! My Mom also shared with me her love for and her gift of cooking. -
Meme was a terrific cook! Her chocolate layer cakes were a work of art! (I still can’t make one as pretty as her’s!) And, her banana pudding…well, it’s been known to make grown men cry! There was always something special at Meme’s table. She’s gone now and I will always miss her. But, I am so blessed that she took the time to teach me the art of cooking. More importantly, she instilled in me the joy of cooking and of sharing beautiful, delicious food with family and friends. This is a priceless gift! A gift that I have shared with my children…who are all awesome cooks by the way. Our teenage son makes a mean sweet potato pie! And, our newlywed daughter is an excellent cook in her own right!

I spent many years in the rat race as an attorney. Crashed and burned (that’s a long,long story for another day)….did a lot of emotional eating of a lot of junk and gained a lot of weight! I’ve had to rethink my relationship with food. I’ve come to truly appreciate and recognize that you can make beautiful, delicious food and it doesn’t have to be bad for you. I’m learning to use what my Mom taught me, combined with a few things I picked up during my two years as a “Vegan Baker and Vegetable Engineer” in an awesome Vegan Prep kitchen. I’m currently working on my certification as a Plant-Based Culinary Professional. There is so much to learn and so,so much good food to cook and eat!
