Easy Breezy Mint Chocolate Pudding is super easy to make, has only seven ingredients and comes together in about 20 minutes. It’s ridiculously easy! And, you won’t believe the main ingredient! Avocados!
Yes! I said, “avocado”! Okay, you can close your mouth now. I promise that I’m not trying to get you to eat some strange green concoction and only calling it chocolate. This Easy Breezy Mint Chocolate Pudding is truly one of the best chocolate puddings I’ve ever eaten. And, believe me…I’ve eaten a lot! Because, I love me some chocolate pudding.
I’m what you might call a chocolate pudding expert! And, Easy Breezy Mint Chocolate Pudding gets a blue ribbon in my book! Its rich, dark, creamy and decadent! Darn near perfect.

If you’ve ever doubted the magic powers of the avocado, this decadently rich dessert will make a believer out of you!
Ingredients
- 2 ripe avocados, peeled and seeded
- 1/4 cup fresh mint leaves, roughly chopped
- 2 tsp mint extract
- Juice of 1/2 lemon
- 1/2 cup maple syrup (or other liquid sweetener of your choice or, if you prefer, you can use fruit paste to sweeten your pudding)
- 3 TB Cocoa Powder
- 1/4 cup Coconut water (or you may substitute water or non-dairy milk of your choice)
- Pinch of sea salt
Instructions
Place avocado in bowl of food processor with a metal blade and blend until smooth. Add remaining ingredients and blend until the mixture is completely smooth and combined. Be sure to scrape the sides to insure that the mixture has blended thoroughly. Taste and add more maple syrup or other sweetener if desired.
