Welcome to the first installment of At Meme’s Table This Week in Healthy Kitchens.
In this new AMT feature each week we select and feature several awesome, healthy, vegan recipes we have encountered on our travails across the Internet, in our never-ending search for a better, an always improving lifestyle.
But let’s not waste any further time and get this party starring a test kitchen, a cat kitchen, a caveman, and even a vegan soccer team started.
Seitan Marsala with Smashed Potatoes and Broccoli
When this post showed up in my feed reader I immediately knew it, this was a winner and would open our new AMT feature. How else could one have felt upon discovering the following words in a title: Seitan, Marsala, and Broccoli?
Derek and Chad, AKA as The Sarno Bros, over at Wicked Healthy came up with this winner, this 80% healthy and 20% wicked recipe, using wheat gluten (seitan), the culinary popular Sicilian Marsala wine and broccoli, mushrooms, and a bed of smashed potatoes.
All ready in less than 45 minutes. We know what will become a regular feature on our winter table!

Vegan Starbucks Cream Cheese Pumpkin Muffin Recipe
If I say Halloween food, of course you say pumpkin. Mary over at her Test Kitchen goes further and says “Starbucks Cream Cheese Pumpkin Muffin Recipe”. Without hesitation, without any sense of shame she said that.
We surrendered. Gladly and more than willingly, before looking when we could next schedule that baking session.
In her post Mary offers two different types of muffin, the Starbuck style pumpkin spice with the vegan creamcheese baked in or the Tim Horton’s style muffin with the vegan creamcheese piped in after baking. The reality though is that we are really struggling to type this because…

Mediterranean Pulutan Plate
Alright, alright I admit it. It isn’t truly pulutan if it’s Mediterranean but there’s a reason I went with the Filipino term for fingerfood. Imagine after pumpkin spice muffins and seitan marsala with broccoli I had presented you with crispy falafel, roasted red pepper hummus, gluten-free tabbouleh, and garlic dill tahini.
Sucker.for.buzzwords.™ you would have called me.
To which my reply would have been a simple #suemeatleastiknowwhatisgood but let’s not disgress, shall we.
This vegan Mediterranean plate concoted by the vegan caveman is just… errr, finger-licking good.

Sweet & Smoky Glazed Tofu Ham
With the colder evenings slowly creeping upon us, this glazed ham ersatz recipe by Isa Chandra is just the perfect table center piece for weekend roasts meals or festivities even.
Isa’s recipe is as simple as they come but needs a whopping 6 hours because of the time required to marinate the tofu. Despite its simplicity in prepartion, there’s something absolutely yummy about the concept of sweet & smoky glazed tofu.

We end our first installment of This Week in Healthy Kitchens with an extra link about a vegan soccer team. You read that right, a vegan soccer team. It’s all happening in the U.K. and FIFA even branded them the greenest club on earth.
Of course, it takes an American news outlet to cover the topic, which the New Yorker so gracefully did for us.
